This Muddy buddies is less sweet than the original, using dark chocolate and natural almond butter for a healthier twist while still keeping the delicious flavor and crunch you love!

Ingredients:

  • 4 cups whole-grain cereal (like plain Chex or a low-sugar alternative)
  • ½ cup natural almond butter (or peanut butter)
  • ¼ cup dark chocolate chips (70% cocoa or higher)
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup (optional, for sweetness)
  • ¼ cup powdered coconut sugar (for dusting)

Instructions:

  1. Melt the Almond Butter & Chocolate: In a microwave-safe bowl, combine almond butter, dark chocolate chips, and coconut oil. Microwave in 20-30 second intervals, stirring between each, until smooth and melted (about 1-2 minutes total). You can also melt this mixture in a saucepan over low heat.
  2. Add Flavor: Once the mixture is melted and smooth, stir in the vanilla extract and maple syrup for extra sweetness if desired.
  3. Coat the Cereal: In a large bowl, add the whole-grain cereal. Pour the melted chocolate-almond butter mixture over the cereal and gently toss until all pieces are evenly coated.
  4. Dust with Coconut Sugar: Transfer the coated cereal to a large zip-lock bag or airtight container. Add the powdered coconut sugar and shake well to coat the cereal evenly.
  5. Chill & Enjoy: Spread the cereal out onto a lined baking sheet or tray. Let it sit for about 10-15 minutes to set (you can speed this up by popping it in the fridge for 5 minutes). Once it’s set, it’s ready to enjoy!
