These Earl Grey cookies are buttery, fragrant, and perfect for enjoying with a cup of tea!
Ingredients:
- 1 ¾ cups all-purpose flour
- 1 tablespoon loose Earl Grey tea leaves (about 2 tea bags)
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter (softened)
- ½ cup granulated sugar
- ¼ cup powdered sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon milk (optional, for softer cookies)
Instructions:
- Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Infuse the flour with tea: In a small bowl, whisk together the flour, Earl Grey tea leaves, baking powder, and salt. Set aside.
- Cream the butter and sugar: In a large bowl, beat the softened butter, granulated sugar, and powdered sugar together until light and fluffy, about 2-3 minutes.
- Add egg and vanilla: Beat in the egg and vanilla extract until combined. If you want softer cookies, add 1 tablespoon of milk.
- Mix in the dry ingredients: Gradually add the flour mixture into the wet ingredients, mixing until just combined. Do not overmix.
- Chill the dough: If your dough is too soft, chill it in the refrigerator for about 20-30 minutes to make it easier to handle.
- Shape and bake: Scoop tablespoons of dough and roll into small balls, placing them about 2 inches apart on the baking sheet. Gently flatten each ball with your hand. Bake for 10-12 minutes, or until the edges are just starting to turn golden brown.
- Cool and enjoy: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Tips for Earl Grey Cookies:
- For a more intense Earl Grey flavor, you can steep the tea leaves in the butter before making the dough.
- Store cookies in an airtight container for up to a week.
